No Drippings Scratch Gravy recipe
Sometimes, like if you make a smoked, barbecue or fried turkey you will not get any drippings to make the gravy. Also if you brine the turkey your drippings will be too salty to make gravy. Also if you make this gravy you can make it ahead of time and not feel rushed. In any instance, this is an easy gravy recipe that is much better than something that comes from a packet. Makes about 4 cups gravy.
Ingredients:
- 1/4 cup butter
- 1/4 flour
- 1 cup white wine
- 3 cups turkey or chicken stock, or more as needed
- 2 teaspoons poultry seasoning
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 tablespoon chopped fresh sage
- salt and pepper, to taste
Directions:
In a medium saucepan melt the butter over medium heat. Add the flour and whisk while cooking for about 5 minutes or until flour is lightly browned and smells nutty.
Add the wine and stock and cook until it reaches a boil and becomes thick. Add more stock if it is too thick and remove from heat.
Add the seasonings and herbs, taste and add salt and pepper. Chill and store in the refrigerator until ready to serve or serve immediately.
