Whipped Sweet Potato Casserole recipe
My mom always used canned sweet potatoes for this recipe but I think I prefer fresh. They are able to absorb more butter flavor! This recipe serves 8.
Ingredients:
- 4 pounds sweet potatoes
- 1 stick butter
- 1/2 cup brown sugar
- 1 cup chopped pecans
- 1 teaspoon of each cinnamon, ginger, nutmeg
- 1/4 teaspoon ground cloves
- 4 cups marshmallow
Directions:
Peel the sweet potatoes and cut into large chunks. Place in a pot of well salted water and bring to a boil. Turn down to a simmer and cook until potatoes are tender when pierced with a fork.
Strain the potatoes into a colander and place into a large bowl or the bowl of a stand mixer.
Add the butter, sugar, and spices. Blend in a stand mixer or with a hand held mixer on medium speed. Fold in the pecans.
Place in a baking dish and top with marshmallows.
Bake at 350F for 20 minutes or until marshmallows are browned.
